Pan-fried Rainbow Trout with New Potatoes and Green Beans

Trout is full of healthy Omega-3 fatty acids and goes perfectly with new potatoes and green vegetables


  • 1 tbsp olive oil
  • 1 Trout Fillet
  • 3 or 4 New Potatoes
  • Handful of green beans
  • Half a lemon
  • Salt and pepper for seasoning


  • Bring a medium sized pan of water to the boil and add new potatoes and cook for 8-10 minutes or until tender. Add green beans around halfway through and cook for 4-5 minutes.
  • Whilst the vegetables are cooking, heat a tbsp of olive oil in a small frying pan. Add the seasoned trout skin side down and cook for 2-3 minutes before turning over and cooking for the same amount of time om the other side. Turn off heat and squeeze over lemon before serving alongside new potatoes and green beans on a warmed plate.
